Today this is a Christmas carol, but it has pagan origins and is probably well over 1000 years old. In cold winter climates like England's, holly and ivy have always been taken indoors, hoping that the occupants would survive difficult conditions just like the hardy holly and ivy. Perhaps the church decided that if you can't beat the old pagan rites, then join them, and so they adopted this old pagan song and made it into a Christmas carol? The colours of the holly and ivy, red and green, are traditionally associated with Christmas.
The holly and the ivy, When they are both full grown
Of all the trees that are in the wood The holly bears the crown
O the rising of the sun And the running of the deer
The playing of the merry organ Sweet singing of the choir
